One is left to imagine how a group of a few hundred suped up apes eventually take over the planet by climbing the towering California redwoods and gazing over San Francisco. Corny in the extreme.

Actually if you had watched the very ending, and paid attention to the plot you would have realised that the chemical that makes the apes smarter does not affect their immune system; however a humans immune system can't handle it making it deadly. You see this with the one scientist who got it in his system and died near the end of the film. Take into account the old formula that the lead character used on his father was not the same one used later in the film, it is the enhanced version which happend to not be compatible with humans... If you also remember there was that obnoxious neighbor who gets sneezed on by the soon to be dead scientist, and he too catches the infection. Just seconds after the credits come the film shows one last clip, the clip is of the neighbor who got sneezed on and who also happend to be a pilot. It shows that his next flight is to New York, now remember he is carrying that virus that is deadly to humans, but does not effect apes at all. Thus leaving the audience to believe that it is the infection that wipes out the humans over time, leaving the apes (who happend to be the next smartest animals in line) in charge of the planet. I agree if the film had ended on how you perceived it, it would be pretty dumb right? I also would have doubted that that a small handful of apes would be able to take over the world, but the actual ending is as described above.
